Gluten may be to blame. Jefferson gastroenterologist Stephanie Moleski, MD, recently provided some insight into gluten sensitivity and celiac disease in an interview with the Philadelphia Inquirer.
“Celiac is an autoimmune disease, triggered by the protein gluten found in wheat, barley, and rye,” said Dr. Moleski.
Celiac disease damages the small intestine, causing patients the inability to absorb nutrients when they consume gluten. Those suffering from gluten sensitivity face the same problems, minus the intestinal damage. Symptoms may include gas, bloating, headaches and even joint pain.
